Now the rush is over, and we can relax as a family. We live in Minnesota, where it’s quite cold and likely to get worse, so comfort food is the order of the day. Baked pasta dishes are perfect. Here’s my secret – I like to brown up a bunch of hamburger and then divide it into baggies or plastic containers to make the next hot dish (or casserole, if you prefer) even easier.

January is the month for New Year’s resolutions … and for some of us, that involves food (or the lack thereof). Sigh. Must we live a life of denial and self-deprivation? It turns out NO! Our fabulous test kitchen has cranked out an amazing array of “Delicious Done Light” recipes … yay!

There’s one food at my house that always gets thumbs up – PIZZA! you can use almost anything as topping, you can serve a simple side like carrots and ranch, and if there are leftovers you can eat them cold or nuke them in just a few seconds.
