May is a month filled with celebrations … starting this weekend with Mother’s Day! Plus, graduations and confirmations are marked on everybody’s calendars. This year, I’m gonna lose those 10 pounds. I have a plan, and it starts with pound cake. No, really! The Lightened Almond Pound Cake Trifle has applesauce, sugar-free pudding, skim milk and berries (a super food!) – so this recipe is really dreamy in a goal-oriented kind of way … the perfect way to start the year!
I’m not big into Christmas baking, but I do love sweets. Luckily, these cookies are super easy to make, and the little dollop of fruit spread makes them extra pretty. One more thing checked off the list!

A couple months ago when I was on vacation in Florida I fell in love with coconut pineapple ice cream. It was so delicious I knew I had to come up with a recipe using the ice cream. So here it is, but beware – you won’t be able to eat just one piece, and your guests will rave about it.
