I love meals that come together quickly. So loaded potatoes are a go-to. No fancy ingredients, no planning ahead, no huge pile of dishes after. Simply bake potatoes (or microwave them, or have the kids throw them in the oven if they’re old enough), cut them open and fill them with tasty toppings. Use a big enough potato and it’s a meal; use a smaller potato and it’s a perfect side dish!
Smoked Bacon Loaded Baked Potatoes
- 1 packet Smoked Bacon Warm Dip Mix
- 8 oz. softened cream cheese
- 4 large baking potatoes, scrubbed and baked until tender
- 4 Tbsp. finely shredded Cheddar cheese
- Chopped tomatoes
- Cooked, crumbled bacon
- Sliced green onions
Combine dip mix and cream cheese; heat gently in microwave until melted. Split potatoes open; dollop about 2 tablespoons prepared warm dip into each potato. Top each with about 1 tablespoon shredded Cheddar cheese and remaining ingredients to taste. Makes 4 servings.
Tips
- Serve any leftover warm dip with tortilla chips or crusty bread.
- Make a fun baked potato buffet! Lay all the ingredients out in little bowls and let everyone make their own. Include cooked, crumbled ground beef or cubed, cooked chicken for a whole meal.
- Sour cream or plain yogurt would make these even gooier.
