Caribbean Sundaes
- Caribbean Beach Bread Mix
- 8 oz. can crushed pineapple with juice
- ¾ cup water
- 1 egg
- Vanilla ice cream
- Creamy Caramel Sauce
- Rhubarb Strawberry Fruit Spread
- Fresh strawberries
- 8 oz. can pineapple chunks, drained
Preheat oven to 350 degrees. Combine first 4 ingredients; pour batter into a greased 9 x 5 loaf pan. Bake for 50-55 minutes. Cool completely. Slice Caribbean Beach Bread; top each slice with a scoop of ice cream and remaining ingredients to taste. Makes 8-9 servings.

Tips:
- The added egg makes the bread more sturdy for slicing from a loaf.
- If you can find fun tropical ice cream flavors such as pineapple, mango or coconut, that would be fun in place of the vanilla ice cream.
- Fresh pineapple is a little more work than canned, but it tastes great and looks beautiful.
- Sliced bananas would be good on this too.
- A dollop of whipped cream or non-dairy whipped topping would be a nice topper.
- If you like, cube the bread and layer the ingredients in pedestal dessert dishes or stemless wine glasses.
