As a wife and mother of three active kids I’m always looking for ways to increase family time. Often times during summer evening meal preparation my husband and kids are outside grilling and I’m in the kitchen baking dessert. I decided I wanted to be outside with my family, but I knew forgoing dessert might not be an option. You can imagine my excitement when I came across this recipe. I baked the cake and sliced the fresh pineapple ahead of time. When it was time for everyone else to go outside I got to go along too. Grilling this delicious dessert was so easy and fun. I was amazed at how much flavor the grilling process added to the dish.
Grilled Pineapple Right Side Up Cake

- Absolutely Almond Pound Cake Mix™
- 1 cup water
- ¾ cup (1 ½ sticks) butter, melted
- 1 fresh pineapple, cut into rings, halved
- Caramel ice cream
Preheat oven to 325°. Prepare Absolutely Almond Pound Cake Mix as directed on the package with water and butter. Bake in a greased loaf pan for 55-60 minutes. Cool; slice. Grill pineapple rings until heated through; grill pound cake slices until lightly browned. Serve pineapple on cake slices; top with ice cream. Makes 9 servings.
Tips:
- Lightly coat your grill with vegetable spray before grilling the pineapple rings.
- Canned pineapple may be used instead of fresh, but may fall apart more easily than fresh when grilled.
- French vanilla ice cream is a nice alternative to caramel ice cream.
- Top each dessert with a stemmed maraschino cherry if desired.

- 1 container caramel ice cream
