I absolutely love the Blue Ribbon Blueberry™ Bar Mix. Last year when I heard they were going to discontinue the mix I went searching for it and bought up every box I could find. My husband and kids found it humorous that the pantry was stocked with what appeared to be nothing but boxes of the mix. You can imagine how delighted I was when they brought this favorite back. Seriously, who can resist blueberries? They are brilliant in color, bursting with flavor and so versatile you can add them to a variety of dishes. Now pair them with the fresh, clean flavor of lemon and you’ve got a match made in heaven. These Frosted Blue Ribbon Lemon Bars are so delicious my family is now helping me stock the pantry with more Blue Ribbon Blueberry Bar Mix!
Frosted Blue Ribbon Lemon Bars

- Blue Ribbon Blueberry™ Bar Mix
- 1 egg
- ¼ cup (½ stick) melted butter
- ¼ cup Meyer Lemon Infused Oil
- Canned cream cheese frosting
- Diced fresh strawberries
- Blueberries
Preheat oven to 350°. Combine ingredients in a large bowl; stir until dough forms. Press dough evenly into a greased 8 x 8 baking pan. Bake 17-22 minutes or until lightly browned. Cool completely; top with cream cheese frosting and fruit. Cut into bars. Makes about 16 servings.
Tips:
- One-half cup (1 stick) of melted butter may be used in place of ¼ cup melted butter and ¼ cup Meyer Lemon Infused Oil.
- Use canned lemon frosting in place of cream cheese frosting if desired.
- If you’re not planning to serve the dessert right away, frost the bars and top with fresh fruit just before serving.
- Cut bars into triangles instead of squares for a different look.
