I love tacos. But I don’t love cleaning up, and unfortunately I have some messy eaters at my house (true confessions: I am one of said messy eaters). Bam – grill the meat in patties, use slices of cheese and tomatoes instead of shreds, and wrap it all up in a tortilla. Even my family should be able to eat these tacos with just one napkin apiece (that’s a rarity for us).
Easy-to-Eat Taco Burgers

- 1 tsp. Fiesta Party Dip Mix™
- 1 lb. ground beef
- 1 tsp. ground cumin
- 1 Tbsp. Onion Onion™
- 4-5 (6-inch) flour tortillas or taco shells
- American cheese slices
- Sliced tomatoes
- Leaf lettuce
- Sour cream
Combine first 4 ingredients; stir to blend. Shape meat mixture into 4-5 patties in the shape of half a tortilla. Grill or fry patties to desired doneness. Serve patties in tortillas (like a taco); layer with remaining ingredients. Makes 4-5 servings.
Tips:
- The beauty of this recipe is that 1) there is no chopping of tomatoes or lettuce and no shredding of cheese, and 2) because it’s not chopped, it doesn’t fall apart when you eat it!
- Add more Fiesta Party Dip Mix if you want a spicier taco.
- Use sliced Cheddar cheese or Monterey Jack in place of the American cheese if desired.
- Crispy taco shells taste more authentic, but using small flour tortillas will help make it less messy, too.
- Make the half-moon hamburger patties pretty thin so the rest of the fillings will fit in the shell or tortilla.
