This fluffy and light dessert is simple to whip up when you need a little sugar high.

Believe it or not, several states claim to have invented the whoopie pie. Pennsylvania has my favorite argument. They say that this traditionally black and white treat was made by Amish women who would put them into their children’s (or husbands’) lunch boxes. When the children would open their lunches they would squeal with delight … “WHOOPIE!” Although Maine, Massachusetts and Pennsylvania all claim to have invented the whoopie pie, no one has proven their theory … but this dessert is so good it doesn’t matter who invented it!

Preheat oven to 350°. Combine first 3 ingredients in a large bowl; stir to blend. Drop dough by heaping tablespoons onto a greased baking sheet to make 12 “cookies.” Smooth tops evenly and shape cookies into a round shape with a spoon if needed. Bake 12-14 minutes or until a toothpick inserted in the center comes out clean. Cool cookies completely. Combine chocolate sauce and powdered sugar; stir until smooth. Spread an equal amount of powdered sugar filling on each of 6 cookie bottoms. Press a second cookie bottom on top of cream filling to form a sandwich. Chill until served. Makes 6 whoopie pies.

Tips:

  • The cookies will spread a little while baking, so give them plenty of room on the baking sheet.
  • Roll the edges of the whoopie pies in chocolate sprinkles or chopped nuts.
  • Keeping the whoopie pies chilled until served will keep the filling nice and firm.
  • These whoopie pies are quite large, so you may want to cut them in half or quarters. Again, be sure they are well-chilled before you cut them.
  • Use Absolutely Almond Pound Cake Mix in place of the Classy Chocolate Pound Cake for the cookie portion of the whoopie pies. They come out looking like little hamburgers!
