I love summery salads – and with the combination of fruit, nuts, chicken and tangy Vidalia® Onion Dressing, this salad really has something for everyone!

Chicken Salad with Grapes

Ingredients

  • ½-¾ cup Vidalia® Onion Dressing
  • 2 cups cooked, diced chicken breast
  • 1 cup halved red grapes
  • ½ cup chopped celery
  • ½-¾ cup salted cashew pieces or halves

Directions

Combine ingredients; chill to blend flavors. Serve in half a seeded cantaloupe or on mixed greens. Makes 6-8 servings.

Testing Notes:

  • The cantaloupe really makes an impressive presentation. To choose a perfectly ripe melon, press on the bottom end – it should give just a little bit. And of course, it should smell fresh. Luckily, cantaloupe are in their peak season right now.
  • If you use leftover chicken, you can make this salad without heating up the stove or the grill! I always like to cook up an extra chicken breast or two for just that reason.
  • Although whole cashews look beautiful in the photo, they can be a bit overwhelming in this salad, so you’ll definitely want to crush them a bit. Simply put them in a zip-top bag, remove all the air and roll a can or rolling pin over the bag a few times. There’s no need to pulverize them – just make the pieces slightly smaller than a whole cashew.

    I made this salad last week but used sliced almonds for the nuts and used left over rotisserie chicken. Very nice way to use left overs and not turn on the oven!

    I used to buy a salad like this at QFC but never thought of making it using the Vidalia Onion Dressing. Thank you so much for the recipe and now I can enjoy it whenever I want.
