We have a wonderful Product Development Team here at Tastefully Simple, and the leader of the pack is the very cool and trendy Terri Emery. Her husband is a gourmet cook and his recipes are usually over my head, but a few weeks ago Terri shared their amazing recipe for Roasted Cauliflower – it has just five ingredients, it’s low carb, and oh my stars is it good!
One of my dinner criteria is that it should make good leftovers – suitable for lunch the next day, or maybe even dinner later in the week. That means it has to hold up in the fridge for a few days, it can’t take a lot of time or effort to reheat, and I have to want to eat it again. I love meals that come together quickly. So loaded potatoes are a go-to. No fancy ingredients, no planning ahead, no huge pile of dishes after. Use a big enough potato and it’s a meal; use a smaller potato and it’s a perfect side dish!
