Buffalo wings were created as an appetizer less than 20 years ago. And did you know they were created by accident? Now they have been united with pizza to create the ever-popular buffalo chicken pizza.
Now that practically every restaurant in America has a version of this pizza, why not make it at home? The kids will love getting to help top the pizza. It’s also great for busy nights when time is crucial, but you still want your family to have a homemade dinner.
Buffalo Chicken & Bacon Pizza

- 1 lb. boneless, skinless chicken breasts, diced
- 1 Tbsp. butter
- 2 Tbsp. hot sauce or to taste
- Bold Buffalo Blue Cheese Dip Mix
- 8 oz. softened cream cheese
- 12 inch pre-baked thin pizza crust
- 6-8 oz. shredded Colby Jack cheese
- 2-3 Tbsp. crumbled blue cheese
- 2-3 Tbsp. crumbled bacon

Directions
Sauté diced chicken in butter until no longer pink; add hot sauce. Simmer 3-4 minutes to blend flavors; cool in juices. Drain chicken. Combine next 2 ingredients; stir to blend. Spread cream cheese mixture on pizza crust (you may have some left over to enjoy with chips); top with chicken, cheese and bacon. Bake according to directions on pizza crust packaging. Makes 6-8 servings.

Tips:
- You can use diced rotisserie chicken in place of the raw chicken. Toss the cubed rotisserie chicken with hot sauce and let stand for 10 minutes.
- I used the bacon pieces that come in a jar. It’s real bacon, you just don’t have the mess and you can add a little more if you want.
- The leftover cream cheese mixture is excellent stuffed into celery sticks.

I have made this and it is delicious! Seriously, tasted better than a restaurant’s version. My husband also loved it! Will be making it, again, REAL soon! I used my bread machine for the pizza dough and leftover chicken from a previous supper.
