Today is a super exciting day. Why? Because our new Fall-Winter products are on sale! It’s also a bittersweet time of year – a time to “fall” in love with the new products and, sadly, say goodbye to summer. Luckily, we have Labor Day weekend to look forward to, and one last chance to put our grill to work all weekend. So have the best of both worlds with this Bold Buffalo Grilled Chicken Club Sandwich.
This recipe uses two of my favorite products from the Fall-Winter line: Bold Buffalo Blue Cheese Dip Mix and Roasted Garlic Infused Oil. I love the combo of spicy hot and creamy blue cheese. Bold Buffalo is so versatile it gives a bold punch of flavor to a boring chicken breast. I used the dry mix to season the chicken and the prepared dip as a bread spread. I’m also thrilled that my favorite Roasted Garlic Infused Oil is staying for back-to-back seasons – this is my most used Tastefully Simple product! I use it all the time for roasted veggies and baked or sautéed fish. In this recipe I’ve used it to give a little extra attention to the bread. What’s not to love about toasted garlic bread? Enjoy!
Bold Buffalo Chicken Club Sandwich
Ingredients
- 1 loaf French bread
- Roasted Garlic Infused Oil
- 4 boneless, skinless chicken breasts
- Prepared Bold Buffalo Blue Cheese Dip (reserve 2 tsp. dry dipmix for chicken)
- 4 oz. crumbled blue cheese
- 8 slices cooked bacon
- Leaf lettuce
- Sliced tomato
Directions
Slice French bread in half lengthwise and brush cut sides with Roasted Garlic Infused Oil; set aside. Brush both sides of chicken breasts with Roasted Garlic Infused Oil and sprinkle with reserved dry Bold Buffalo Blue Cheese Dip Mix. Grill chicken breasts over medium heat about 6-8 minutes per side or until done. Top chicken breasts with crumbled blue cheese. Grill bread cut side down until lightly golden; slice bread into four sandwich-size pieces. Spread bread with prepared Bold Buffalo Blue Cheese Dip; top each sandwich with lettuce, tomato, chicken breast and two slices of bacon. Makes 4 servings.

Testing Notes
- Use any style sandwich bun you like, grilled or not.
- The step of seasoning the chicken with the reserved dip mix can be skipped, but I liked the way the paprika in the dip mix gave the chicken a nice golden brown color.
- This recipe could easily be transformed into a salad – simply top chopped lettuce with sliced grilled chicken, chopped tomatoes, blue cheese crumbles and chopped bacon, thin dip mix with milk for a dressing and serve with slices of grilled French bread. Yum!
