There is nothing better than lighting up someone’s face, is there? I remember when my 4 year old cousin got his first hockey stick – it was from Santa. He was so excited to see what was in his stocking that he all but threw the hockey stick out of the way, then all of a sudden it registered…a HOCKEY STICK!!! Talk about a face lighting up! When my daughter got a blue ribbon at the state fair for her presentation last summer…her face was so lit up she practically sparkled.
And speaking of state fairs, how about lighting up someone’s face this weekend with Janice Daigle’s (NY) totally boss Blue Ribbon Blueberry Cobbler. With just 3 ingredients, it’s crazy easy to make and my husband’s face positively lit up when he tried it…I love that! So cuddle up with your cutie and a cobbler and enjoy!

Blue Ribbon Blueberry Cobbler

- 21 oz. can blueberry pie filling
- 1 box Blue Ribbon Blueberry™ Bar Mix
- 1/2 cup (1 stick) softened butter
Spread pie filling into greased 8 x 8 baking pan. Cut Blue Ribbon Blueberry Bar Mix and butter together until mixture is crumbly. Sprinkle over pie filling. Bake at 350° for 40-45 minutes. Makes 8-10 servings.
Testing Notes
- I used a pastry blender to mix the butter into the mix, but only because I had one handy. It would work just as well with a spoon.
- When I poured the mix over the blueberry pie filling, it seemed like I had a lot of topping for an 8×8 pan, but the fruit-to-topping ratio was perfect in the end.
- I baked it for the full 45 minutes.
- I cooled the cobbler completely on the counter, and it came out of the pan very nicely with a small metal spatula. I served it in small bowls and it held its shape nicely – some cobblers really spread apart. I think cooling it completely helped.
- A little spritz of whipped cream on the top and a few berries really cuted up the presentation…but it’s just as yummy without them!
