My personal definition of a successful meal is when someone asks me to make it again. And while my little one is too young for solid foods or asking for more, I have a friend whose children ask for this chicken all the time.
At my house, I am the Chief Cook and my honey is the Chief Bottle Washer. It’s an arrangement that works well for us, as we both excel at our respective duties. However, on “grill nights” the cooking goes to my dear husband, Stevie the Wonder Griller. Give me a stove and I’ll make you something good to eat … give me a grill and I’ll either make extra-dry jerky or hockey pucks, depending on the day.
Think about the last celebration event you went to (a wedding, an awards ceremony, any type of banquet). What were they serving? Usually, chicken with an Italian-style sauce. They typically serve this type of meal because people like it, it’s easy enough to prepare and it’s expected at “fancy” gatherings. So my challenge to you is to have your own “fancy” night at home.
I have an especially exciting recipe to share with you today – it comes to us from consultant Tina Dodge (IL), who participated in our Tastefully Simple Recipe Contest on Facebook a few of weeks ago. We are nearing the middle of May, and you know what that means … Moms across the nation are bracing themselves for burnt toast, rare sausage and pancakes with extra syrup. (Not to mention plates, napkins and forks with extra syrup, and possibly some variety of crumbs, juice and syrup on their bedspread.)
Confession: I don’t always eat five or more servings of veggies each day. I know, I know – I should. I LIKE vegetables, it’s just that I also like so much other food. Now that spring is here, there are plenty of fresh vegetables around, giving me one less excuse. Now I just need to make them fun to eat …
