Green Eggs and Ham

I’m not a “theme party” kind of a gal … heck, I’m barely even a dinner party kind of a gal! I love cooking, yet “serving” is a skill that sort of eludes me. I often simply spend my time in the kitchen cooking, and then I hand platters, pots and plates of food over the counter – in random order – to whomever may be seated on the other side, be it friends or family. I used to feel guilty about this, but honestly no one seems to mind. Or at least they are kind enough to pretend they don’t mind, so I continue merrily on my way, not worrying about details like place settings, napkin rings or color schemes. Read more»

Corned Beef and Cabbage for Irish wannabes

I love corned beef and cabbage … but only when someone else cooks it! My Irish friends say, “Oh that! ’Tis nothing to make it!” But my corned beef never quite turns out as tender and tasty as I’d like. Plus, making it does seem like a project to me. I suppose it’s because “my people” didn’t make it. I don’t think I even had corned beef until I was in my 20s … in fact, what IS corned beef anyway? My childhood was a little chaotic. My parents were very young when they married and had me, and we had some struggles in those early years. We moved frequently, I went to a lot of different schools and there was sometimes uncertainty in our lives. In spite of this, we were never hungry – there was always food for our table even in the worst of times, and I was very lucky to have a strong support system in my grandparents and extended family.
